Dive into the Complexity of Barrel-Aged Sour Beers
At California Wild Ales, we are dedicated to crafting barrel-aged sour beers that defy convention. By patiently aging our beers in oak barrels for 9-12 months, we achieve a remarkable depth of flavor that is both tart and funky. But we don’t stop there. To infuse an extra layer of complexity, we then introduce fresh local fruits, allowing our brews to re-ferment for an additional 4-8 weeks. This meticulous process may take longer, but we assure you the wait is truly worthwhile.

This place is the bomb-diggity! Amazing vibes and the owners are the coolest people around. They are so welcoming and active in the community. The beer is excellent with custom brews and tasty flavours. I love their attention to detail in the beer as well as the space even farther into the graphic design of their logo and cans. My favorite are the double hazy IPA and the red grape sour featured at the time. I would give more stars if I could!
Ella is one of the best bartenders I’ve ever had the pleasure of being served by. Her knowledge of craft beer is outstanding, and she’s always able to recommend the perfect drink for any taste. Whether it’s a busy night or a quiet afternoon, Ella remains professional, quick, and attentive. She makes every guest feel welcome and ensures everyone leaves satisfied. Truly an asset to the team from what I’ve seen!
Wow! What an experience! The only thing tastier than the beer is the vibes. Although I’m local, I’ve never stumbled in before. I had a buddy in town and he wanted to check it out. Dude. Seriously. Real talk. This place is on point. They have a great range of beers. I like light lagers, my buddy likes heavy IPAs, and neither of us was disappointed. We also tried some really fun variations like a sangria sour and a really cool citrus infuser hard Yerba mate tea. What about the bartending you ask? Wow! JT was so knowledgeable about the beer and the drinks and created a dope vibe. If you’re around and you like good vibes, good beer, and good bartending, stop in and check these guys out.
